I watch a huge amount. I love the language used in anime the very open and contradictory to japan attitudes, and it's been with me forever.
My favorite series which is not on here is Kashimashi Girl Meets Girl it's so childish but I'm just in love with it, also it's always good to see a nice lesbian series. The manga ends up making it more straight because most Japanese lesbian stories are about the magical teenage years of experimentation.
I've deeply enjoyed so many that it's pointless to watch, though I watch a bit less now that I have few people to talk to. I watched soul eater purely for Blaire the series was way too shounen for me but Blaire is a hot cat girl with no sense of decency. I would like her to have her own series. I like talking anime but don't have many avid anime friends.

Haha making me think of agent Aika. that was so panty filled it couldn't even be considered hentai anymore it was just satirracally brillian in the first episode. Funny how they made it like the camera man was trying to find new angles.

Umm thats all I an think of for now, mostly thats a list of what I own but only a few I dont.
I would say I love action anime/manga more than I like girly/romantic types... Here's my list:

I will say that in all the animes I do prefer the Japanese voice actors. All the English actors are from Canada and there's only like 1/2 dozen of them so I here the same voices in all the animes because, I dunno, maybe they think they don't have to change their voices per character because there's nobody else to play the character anyway. LOL, just a theory. Anyway, I just think the Japanese voice actors are more skilled in their profession. So I don't mind subtitle (although I should be learning Japanese by now)

I used to be heavily into anime in the past, however lately I just can't find time for them, so it only seems right that I do a little tribute to those that stood out a little more in my mind. Here's my not-so-long list of ones that I've really enjoyed watching. :)
Speed Grapher Action, crime-fiction, supernatural When one war-photographer investigates into a fetish-club, he is drawn into things a little too deeply as he tries to rescue the club's "goddess".
Elfen Lied Drama, Horror An anime that deals with the darker sides of humanity, such psychology, child abuse and discrimination. Beautiful and haunting anime. Kamikaze Kaitou Jeanne (Mostly the manga in this case) Magical girl, Romance Le Portrait De La Petit Cossette Horror, Romance Beautiful and haunting, about a pretty ghost from the 18th century who exploits a young boy. Very gothic anime.
Welcome to the NHK Dark-comedy, Drama The story is an interesting take on a person's life and it centers around themes such the hardships of life and how people must deal with them in their own way.
Alice 19th Adventure, Fantasy, Magical girl, Romance A girl is granted supernatural powers when she saves the life of a rabbit.
Ginga Densetsu Weed Action, Adventure Beautiful, but violent story about a young puppy in search of his father.
Wolf's Rain Adventure, Post-Apocalyptic, Supernatural About the future where wolves have become almost extinct and the ones remaining are hiding in human-form, seeking out paradise.
Darkstalkers Action, Science-fiction The plot is rather confusing as the characters are based on those from a video-game, dealing on a more gothic approach with a cliché theme such as good vs evil, I do however love my favorite cat-girl character, Felicia.
X Urban fantasy An anime that combines elements from various end of the world scenarios, both secular and religious, with its own myths.
Kuro****suji Drama, Supernatural A Victorian anime based around a butler serving his minor Master.
Steel Angel Kurumi Adventure, Romantic-Comedy, Sci-Fi About a young boy that activates a female robot who insists that he is her Master, really cute and sexy anime. Ergo Proxy Cyber-punk, Science-fiction, Psychological thriller, Mystery A dark and gothic anime based in a futuristic enviroment, which focuses heavily on the psychology and mentality of its protagonists.
Azumanga Daioh Comedy, Drama I just love the simplicity and randomness of this anime following the (almost) ordinary lives of high-school girls. It's so kawaaiiii..~~!
MPD-Psycho (Manga) Detective-fiction, Psychological horror A manga series that follows a police detective suffering from multi-personality-disorder, very twisted stuff this is. :P
I also really enjoy the works of Hayao Miyazaki, particulary Princess Mononoke and Spirited Away. :)
